Bannu Beef Pulao:-
Ingredients:
For Yakhni (stock)
▪Beef ............ 1 kg
▪Green chillies........ 5
▪Salt.........3 tsp
(Namak)
▪Whole black peppercorn ..........2 tbsp
(sabut kali mirch)
▪Cumin seeds.........1 tbsp
(Zeera)
▪Onion ..........1 medium sized
▪Clove (laung)...........10 pcs
▪Black cardamom pods .........4 pcs
(bari elaichi)
▪Green cardamom..........8
(Sabz Elaichi)
▪Cinnamon sticks (dalchini).......... 2
▪Bay leaf (tez paat)............ 2
▪Garlic (Lehsan)........... 1 whole
▪Fennel seeds.......1 tbsp
(Saunf)
▪Star anise....... 3
(Badayan ka phool )
▪Water............ 2 liter
Cover and Pressure for 30 min.

For Masala :-
▪Basmati Rice....... 1 kg(Soaked for 1 hour)
▪Oil.............. 1 cup
▪Onion (thinly sliced)......2 medium sized
▪Ginger Garlic paste............1 tbsp
(Lehsun and adrak )
▪Tomatoes..............3 medium sized
▪Coriander powder........2 tsp
(Dhania powder)
▪Turmeric powder .......... 1 tsp
(haldi)
▪Black pepper ...... 1 tsp
(kali mirch)
▪Red chilli powder...... 1 tsp
▪Cumin powder ............. 1 tsp
(Pissa Zeera)
▪Salt........4 tsp or as your taste
▪Whole spices powder.......... 1 tsp
(Pissa garam masala )
▪Nutmeg (jaifal) powder......1/2 tsp
▪Mace(javetri) powder .........1/2 tsp
▪Stock...........4 cups
(Yakhni)
▪Water..........4 cups
Direction:-
●For Bouquet Garni (Potli) :-
In muslin cloth, add whole black peppercorn, cumin seeds , clove , black cardamom pods , green cardamom , cinnamon sticks , fennel seeds, star anise and wrap it to make a bouquet garni (potli ).
●For stock (yakni):-
▪In cooker, add beef, whole garlic, onion, salt , bay leaf ,green chillies, bouquet garni (potli) , cover it and pressure cook for 30 mins until meat tender.
▪After that, discard excess material e.g bouquet garni ,whole garlic, bay leaf.
▪ Separate the cooked meat and Beef stock.
●For Pulao:-
▪In pot, heat oil and onion, fry until browned.
▪Add ginger garlic paste and mix it well.
▪Then add tomatoes, coriander powder ,turmeric powder ,red chilli powder ,cumin powder ,salt ,whole spices powder and cook until oil separates and tomatoes soften.
▪Add cooked meat and cook for 5 mins.
▪Add mace, nutmeg ,black pepper and mix it.
▪Add beef stock ,water and boil it. Then add rice in it. Cook on high flame until water reduces.
▪After that, Cover and steam for 20 mins on low flame.
▪Now bannu beef pulao is ready to serve and enjoy 😋
