Torian recipe / turai sabzi

Ingredients:
â–ªRidge gourd......1 1/2 kg
(Torian)
â–ªOnion................1 larze sized(julian cut)
(Pyaz)
â–ªTomatoes..............2 medium sized (finely chopped)
(Tamatar)
â–ªOil.............1/2 cup
â–ªGinger garlic paste.........1 tbsp
(Lehsun adrak)
â–ªSalt...........1/2 tsp or as your taste
(Namak)
â–ªTurmeric powder.........1/4 tsp
(haldi)
â–ªRed chilli powder.........1 tsp
(Pissi lal mirch)
â–ªCoriander powder.......1 tsp
( pissa dhaniyan)
â–ªChicken powder...........1 tsp
â–ªWhole spices powder ........1/2 tsp
(Garam Masala)
â–ªCumin seeds..............1/2 tsp
(Zeera)
â–ªDried Fenugreek leaves........1/2 tsp
(Kasuri methi)
â–ªFresh coriander
â–ªGreen chillies..........1 (chopped)
Direction:-
▪︎Firstly, peel of the ridge gourd (torian) and cut them, set aside.
▪︎In a wok, add oil and onion and fry until golden brown.
▪︎Add ginger garlic paste and mix it.
▪︎Add chopped tomatoes, salt, red chilli powder, coriander powder,turmeric powder and cook until oil separates & tomatoes soften.
▪︎Now add ridge gourd (torian) in it, mix it well and cover it for 5 mins on low flame.
▪︎Do not add water as its cooks on its own.
▪︎Now again cover it and cook for 30 mins on low flame until torian cooked.
▪︎After that, add chicken powder and cook on high flame until water dries.
▪︎Sprinkle whole spices powder, cumin seeds,fenugreek seeds,fresh coriander, and green chillies.
▪︎Cover for 2 mins on low flame.
▪︎Yummy torian sabzi is ready to eat and served with aloo raita.
